How long will it take a letter to go from Scotland to Canada (or vice versa) if it’s sent first class?

Hmmm…
First class is not AIRMAIL, so it may all depend on the speed of the boat and how many stops it makes along the way.
About 7 days, it can be less at times, but the norm is 7days.
I send mail to France from the US and my friends sometimes get it in less than 7 days.
Sometimes 4 days, which is amazing.
